Chickpea Curry

Easy chickpea curry (serves 2-3). Healthy, cheap and filling – this recipe makes a great dinner when you’re short on time and ingredients!

Ingredients:

  • 1 tablespoon oil to fry
  • 1 medium onion, sliced
  • 1 can chopped tomatoes
  • 1 can chickpeas (drained)
  • 1-2 tbsp curry powder (medium or hot) or curry paste (tikka masala works well)
  • handful of spinach (optional)
  • ½ mug frozen peas (optional)
  • salt and pepper to taste
  • rice or naan bread to serve

Method:

1. Cook rice or naan bread according to the packet instructions

2. Heat a saucepan and add the oil and fry the onions until they are caramelised

3. Add the curry powder and mix for a minute until fragrant

4. Add the chopped tomatoes and chickpeas, bring to the boil, then simmer for 10 minutes

5. Add the peas if desired, then 5 minutes later add the spinach and stir until it wilts

6. Season with salt and pepper

7. Serve with rice or naan bread
