Chickpea Curry

Easy chickpea curry (Serves 2-3) Healthy, cheap and filling – this recipe makes a great dinner when you’re short on time and ingredients.


  • 1 tablespoon oil to fry
  • 1 medium onion, sliced
  • 1 can chopped tomatoes
  • 1 can chickpeas (drained)
  • 1-2 tbsp curry powder (medium or hot ) or curry paste (tikka masala would work well) Handful of spinach (optional)
  • ½ mug frozen peas (optional) Salt and pepper to taste Rice or naan bread to serve


1. Cook your rice according to the packet instructions

2. Heat a saucepan and add the oil. Fry the onions until they are caramelised

3. Add the curry powder, mix for a minute until fragrant

4. Add the chopped tomatoes and chickpeas, bring to the boil then simmer for 10 minutes

5. Add the peas if desired, then 5 minutes later add the spinach, stir until it wilts

6. Season with salt and pepper

7. Serve as you wish with rice or naan bread
