Lettuce & Vegetable Soup

A whopping 178 million bags of salad on average are wasted per year in the UK. If yours is looking a bit worse for wear, don’t let it go to waste and try adding it to this delicious soup recipe.


  • 1 cup chopped onions
  • 1 garlic clove, chopped
  • 3 tablespoons unsalted butter
  • 3/4 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup diced (1/3 inch) peeled potato
  • 8 cups coarsely chopped lettuce leaves including ribs (3/4 lb)
  • 3 cups water


  1. Cook onion and garlic in 2 tablespoons of butter in a pot over moderately low heat, stirring until softened (around 3-5 minutes)
  2. Add coriander, salt and pepper and cook for 1 minute
  3. Stir in potato, lettuce, and water and bring to a boil, then reduce heat to a simmer and cover until the potato is very soft (about 10 minutes)
  4. Purée soup in batches in a blender (be careful when blending hot liquids) and transfer to a saucepan
  5. Bring soup to a simmer, then stir in the remaining tablespoon of butter and add salt and pepper to taste
